Mysore Bonda (Maida Bonda) is a traditional and delicious evening snack served in most of the restaurants in Tamil Nadu / Karnataka. Idlis are made in a specialized mold and eaten with chutney, vegetable stew or other flavorful toppings for breakfast or as a snack. I suggest using 3 to 4 days older batter which lends a nice tangy taste to the snack. But I have shared a shortcut method of using leftover idli batter and it is also named as Idli Maavu Bonda. Gram flour bonda or kadalai maavu onion bonda is crispy and tasty. Bajji, Bonda, Pakoda & Vada are the most popular tea time snacks recipes in India especially South India.Most of us make these crispy, deep fried delicacies during weekends or for guests as evening snacks.My friends in Tamil nadu buy Aachi or Sakthi bajji bonda mix powder regularly.But in my family, both MOM & MIL never buy store bought bajji bonda mix.They make it fresh whenever needed. I have substituted rice with cholam/ sorghum and this dosa has become is the batter I grind once or twice a week. Idli, also known as iddly, is a steamed cake made from rice and black lentils originating from Southern India. Dosai maavu is nothing but the batter used to make dosas. The bonda is super easy to make and can be made in less than 10 mins. This is usually made by grinding urad dhal and rice and fermenting it for 8 hours to make delicious dosas. Usually Bondas are made using vegetable like potatoes, but mysore bonda is very light and made just using the flour.
